Cauli Fried Rice

Better than take out? You bet!

If you haven’t heard…. cauli is the new rave. You can find it as pizza crust, rice, garlic bread, and so much more. While I am a big fan of carbs and bread because hello energy and happiness, I do understand the need for more veggies in our diets. I love that this recipe is no fuss and comes together in under 30 minutes. It could be your main dish or a side dish. You can customize your veggies or even play around with using different colored cauliflower. There is so just so much versatility.

I personally tend to go a little bit heavier on the soy sauce with my fried rice but you can leave it untouched if that’s not your thing. There is just something about soy sauce that adds that umami flavor (think savory) to take everything up a notch.

Instructions
  1. Rice cauliflower either using a cheese grater or a food processor.
  2. Whisk eggs together in a medium skillet over medium heat. Cook, stirring frequently.
  3. Place cooked eggs aside and add yellow onion, peas, carrots, edamame, garlic, ginger, and sesame oil into the skillet and cook over medium heat stirring occasionally for 3-5 minutes.
  4. Add cauliflower to the skillet and continue cooking for about 10 minutes.
  5. Add eggs and soy sauce in last and warm for a minute or two.
  6. Garnish cauli rice with green onions.
Recipe Notes
  • Traditional Weaning: Once babe is taking bite-sized pieces feel free to share! I would probably skip the soy sauce and only add to mom and dad's serving.
