I originally created these for babe since I wanted her to become accustomed to a wide variety of foods including plant-based options. As any good mom would do, I needed to sample babe’s food to ensure it was safe 😉 Boy, was I surprised. These sliders were GOOD and not just like good for a baby but like this is what mom and dad are having for dinner now kind-of good.
I even whipped up another batch last night because we spent time after work hiking before all the rain and storms rolled in for the next couple days. So I needed something quick to get dinner on the table so babe could get to bed before she got overly tired. Even my husband liked them! He is a meat and potatoes guy so this really says a lot about how awesome these sliders really are. I served ours with a piece of garlic toast and pumpkin sauce but you can dress yours up any way including as a topping for salad or as a more traditional burger.
Did I forget to mention these suckers freeze great? So whip up an extra batch, wrap tightly with plastic wrap, put them all in a freezer bag, and toss them in the freezer. Then you can just reheat as many as you need at a time. Even the kids could get one to warm up after school!
