No-Bake Grain-Free Fruit Pie

Grain-free and no baking? Whaaaattt? Yes, this pie is really awesome to make because it is quick, includes lots of heart-healthy fats and fiber, doesn’t heat up your house, and best of all it is so fun to get creative with decorating. The mix of walnuts and dates forms a nice sticky and sturdy crust to hold this light and lemony filling that requires very little prep work. You really could use any pudding flavor your heart desires but I like to go a lit more on the citrus side for spring and summer when I find myself making this more often. If you would like you could go with making your whipped cream but for mamas looking to save time (ME) I just opt for the pre-made stuff. I stick to the canned stuff because it has fewer ingredients and made with real cream and no mix of oils (I am allergic to coconut oil). This could be a fun rainy springtime project for the kiddos to make and decorate or to serve at a nice get-together.

Crust
  1. Place walnuts, dates, and sea salt in the blender or food processor. Blend on high with occasionally stopping to scrape anything off the bottom or sides. Continue blending until your mixture is a fine texture starting to resemble a dough. Add the water and mix using a spatula or spoon.
  2. Press the mixture in your pie pan creating a crust. Place crust into the freezer and allow to firm up while you prepare your filling.
Filling
  1. In a large bowl whisk the jello pudding mix and milk for about a couple of minutes then slowly whip in the whipped cream.
  2. Slice fruit if not pre-cut or in the form you would like to use as your topping.
  3. Remove crust from the freezer and place filling inside. Have fun decorating your pie with various fruits and fresh herbs!
  4. Refrigerate until serving or freeze the pie without the fruit topping!
