Pesto Shrimp Pizza

MMMM… simple, quick, and delicious. Yes, yes, yes. This is one of my husband’s favorites that I make. I can throw this pizza together in a matter of minutes and have dinner on the table in less than 20! I am all about simplifying meal times. To save even more time you can skip the prep work and buy pre-cut onions in your produce or frozen section at the supermarket. It is so different than a traditional pizza but has olive oil (in the pesto) for those heart-healthy fats, shrimp for a lean protein, and veggies for an added bonus. Even the kids can help assemble this pizza. I love that it is more light feeling than your traditional ‘greasy’ feeling pizza. Although, I do love that too. This is great paired with a fresh kale salad for a spring or summertime dinner. Did I forget to mention this can all be ready without ever putting a skillet on the stove? If you live anywhere like I do, limitng how much heat you are generating from cooking is essential during the summer. Whew!

Instructions
  1. Pre-heat oven to 425 degrees. Grease pizza pan or large baking sheet.
  2. Place pizza crust on pan and top with pesto sauce. Smooth sauce on the entire crust leaving about half an inch around the edge for your crust.
  3. Top pesto with tomatoes, onion, shrimp, and finally feta.
  4. Place pizza into the oven and bake for about 7-8 minutes or until crust is golden brown and crisp.
