Sweet Pepper Tacos

I LOVE TACOS. Soft tacos, crispy tacos, taco bowls, chicken tacos, beef tacos, meatless tacos, fruit tacos, pepper tacos, you name it I like it. These are so fun because they take something that kids and let’s be honest pretty much everyone love…. tacos and combine it with veggies. Something most parents can agree on that their kiddos need to eat more of but sure have a hard time getting them to buy into it.

Stuffing the peppers once everything is prepped would the perfect cooking activity for little ones to help with. Getting kiddos involved in the cooking process can help them to be more likely to try and even like new foods or maybe even foods they have refused before. They are also bite sized and perfect for little fingers to pick up and chow down on.

The best part, these guys can be thrown together SO quickly. I mean it is ridiculous how quickly these come together for a weeknight dinner that you can feel confident is nourishing your family while still getting the kid seal of approval.

  1. Pre-heat oven to 425 degrees.
  2. Brown ground beef in a medium skillet and drain.
  3. Add taco seasoning, water, and onion to skillet with beef and cook over medium heat until mixture has thickened about 4 minutes.
  4. Rinse peppers, remove the stem and slice in half lengthwise.
  5. Place peppers, open end facing up, on a large greased sheet pan and spoon in the meat mixture. Sprinkle stuffed peppers with cheese.
  6. Place peppers in the oven and cook for about 5 minutes or until the cheese has melted.
